The Process for Brewing Sake and Available Equipment
Polished Rice
If you have unpolished rice, our company or a vendor can handle the rice-polishing process. We can handle lots as small as about 15-20 sacks (900kg-1,200kg).
Washing/Steaming Rice
We use Woodson Company’s continuous rice washer to thoroughly wash off the bran. They have a horizontal continual steaming machine and a batch-type Ginjo (premium sake) steaming vat. Depending on the load, we divide it up between the two machines.
Koji Production
There are two methods for Koji production: Prepare 900kg of white rice through the KOS (automatic Koji-producing machine), or use the Koji room for lots of 100-200kg. We decide which machine to use based on the end product and the volume. We use the KOS all year round.
Fermentation
We use tanks suited for the size and function of the batch, whether it’s Amazake made through the saccharification produced by the enzymes in Koji, or refined Sake made from the alcohol fermentation of yeast, which has high levels of viscosity, or concentrated Amazake that requires a special stirring method. Prepared sizes range from 400L to 1,800L.

Joso Pressing (filtration of fermentation mash)
The porridge-like mash, or Moromi, is squeezed and the Sakekasu (Sake lees) and liquid is separated, a process known as Joso. There are many ways to do this. The different squeezing methods change the taste of the sake.
Filling/Sterilization
There are many containers that can be used to make sure not to damage the fresh and rich taste created in the fermentation process and to promote safe and convenient circulation. We use glass bottles and transparent laminated film. There are many sizes to choose from, too. There are also paper cups and paper packages. Heat sterilization methods change depending on the container being used.

From Commercialization to Shipment
When the container is filled, the process is finally finished. A label that fits the size of the container is applied, and if necessary, it is enclosed in a gift box. Once it is boxed, it is put on a pallet to wait for shipping. We can introduce you to a partner company that handles our products.
